I downloaded the trial version of Alcohol 120% and noticed that there were only 6 possible Virtual CD/DVD Roms. The product page mentions that 31 virtual devices are supported in 120%.

Is this just a limitation of the Trial version? Or is there something else wrong?

This is a Windows Server 2003 Small Business Server.

Yep, 6 in the trial version gives you a chance to try out the functionality. The full version removes this restriction. Note that not all 31 will be accessible as drive letters since Windows only supports up to 26 drive letters (A-Z), though only D-Z will be available, limiting the total drive letter assignments to 23. Less if you have physical optical drives in the system, or more than one HDD or partition on your HDD. The rest must be mounted as directories on your HDD.
