I recently purchased Grand Theft Auto V (Physical DVD Version) PC game.

I would like to make a copy of each DVD and burn them to blank DVD(s) disc so I don't damage the original discs. I would like to play the game off the "copied" discs, so I don't have to worry about scratching or damaging the original discs.

What is the best way of achieving this?

System Report isn't necessary for this. You need to find the DVDs' copy protection (you can use Alcohol's Data-Type Analyzer for this) and use the corresponding Alcohol's DVD datatype. The problem is that you need emulation in order to play the game with an image or disc copy and for technical reasons this emulation isn't available on Windows 10 that you have. That is my last knowledge at least, if something have changed please any other of the Alcohol's stuff correct me.

Thank you.

Will emulation work on Windows 7 Professional SP1 64-bit?

It will work on anything prior to Windows 10.
